No, I don't think it's worth the effort either but in principle, you could change the language to anything if you're careful not to exceed the length of the original strings. I'm a bit late to the party, but I've just installed this on a new PC and it works great!
In the Ace Combat instructions, you have "Extract to your UAW directory", but I think it should be the directory above that.

Even V2.0 has a flag somewhere for installation language. The file 'mainmenu.gui' from V2.0 still contains some French and German text, and if I swap the words 'english' and 'german', so it's reacting to the word 'english' rather than taking the first position in the list. ef_mainmenu.PNG I can't fi...

I think we can replace most of the English briefings, menus and weapons pictures with the French and German equivalents by swapping the appropriate files in did.dat.
What we probably can't do is change the messages that appear on screen as these are hard-coded in the exe.

Weird thing this that the original .hlp files for SEF2000 are now opening fine for me in Windows 10.
I can't remember if this some Windows component I've installed, or if it's arrived in an update.

I ran Install TAW, then entered the link to where the TAW did.dat is.
On running TFXplorer, I had access to the EF2000 scenarios as well, so it may be reading the existing registry entries or something.

Those scripts don't work for me, but that's not surprising given my registry entries. I've tried tried to run the CD installer for ADF, and as it doesn't work on Win10, it's probably the old 16-bit type. It's the same situation with the EF2000 CD. If you look in 'borders.txt' in the TAW 'f22data' folder, there are no fly zones defined around the religious sites of Medina and Mecca in Saudi and Axum in Ethiopia. We probably should tokenize the combined 'raw_names_lists' of all the DiD games, then produce our own LLM to feed into a AI powered hashing algorithm to spit out likely hits.
That's probably enough buzzwords to secure some investment.

Weirdly, on this Windows PC, the only reg entries I have for Digital Image Design are Typhoon related (3dream,Hovis,Typhoon).
I thought I'd at run at least the ADF installer from CD, but maybe just copied the TAW and ADF installations from elsewhere.

To be thorough, I found the English Graphics+ patch on a UK Magazine CD. It's dated 30th June 1997 and probably the same as we already have from elsewhere. It's Readme contains this: "The Graphics+ upgrade will also upgrade your version of DOS EF2000 to DOS EF2000V2.0." So, that doesn't so...

It's looks like that if you're already at the Tactcom level, there is only the Graphics+ to go. This was the largely pre-internet era, so the patch was probably distributed physically for the most part. It would be the first of those...
Looking at my directory for V2.0, I see I have an exe called ef2000.exe of about 1kB...which is what I run from DosBox. There is also the actual game exe called _ef2000.exe which will be called from the first one with those extra parameters.
